Tomatoes and eggs with extras!

1 tin tomatoes with or without herbs
1 pack bacon
1 tin flavored tuna (in sweet chili sauce) you decide
2 eggs
Milk
Butter
cheese

Extras you can add to suite

onions
Mushrooms
Olives
Garlic
Extra herbs

Cooking instructions using the bacon

cook bacon to suite
Cook tomatoes (5 minuets)
Mix eggs with milk and add bacon add some salt and pepper
Add egg bacon mix to tomatoes
Cook to suite
Add some cheese
Cook toast to suite
Serve on toast

Cooking instructions using the tuna

cook tomatoes and tuna (5 minuets)
Add any extra food you like my list is just a suggestion
Mix eggs and milk add some salt and pepper
Add egg mix
Cook to suite
Add some cheese
Cook toast to suite
Serve on toast

You can use flavored tuna that you like or just use plain tuna. And you can use herbs that you like. Or if you like you can cook the tomatoes and tuna or bacon and then just poach the eggs on top and serve on toast or as is and if you like you can cook at eggs separate to the tomatoes, it is up to you. On the toast you can use butter or margarine or as I some times do I use cream cheese spread instead of butter.

1 tin tomatoes crushed with or without herbs
200 grams mince (lamb or beef)
1 pack master foods finishing sauce (any flavor) roasted garlic
1 pack pasta large shells or small shells
1 pack macaroni small tubes
1 pack rice

Extras you can add to suite

onions
Mushrooms
Olives
Garlic
Extra herbs
Butter
Tomato paste
cheese

 

Cooking instructions

cook rice and pasta / macaroni
add finishing sauce
Put aside and cover
Cook mince add some salt and pepper
Add tomatoes to the mince to suite about half a tin
Cook for about five minuets
Add some of the rice pasta mix to suite
Put the rest of the rice pasta mix in plastic containers and freeze

Anthony’s Easy Tomato Mix!

Fried Brown Rice with Garlic Chicken!

Ingredients: Serves:3:

2 tablespoons vegetable oil, divided

250g skinless, boneless chicken breast, cut into strips

1/2 red capsicum, chopped

1/2 cup spring onion, chopped

4 cloves garlic, minced

Directions:

Preparation:20min › Cook:15min › Ready in:35min

1] Heat 1 tablespoon of vegetable oil in a large fry pan set over medium heat. Add the chicken, capsicum, spring onion and garlic. Cook and stir until the chicken is cooked through, about 5 minutes. Remove the chicken to a plate and keep warm.

 

2] Heat the remaining tablespoon of oil in the same frypan over medium-high heat. Add the rice; cook and stir to heat through. Stir in the soy sauce, rice vinegar and peas and continue to cook for 1 minute. Return the chicken mixture to the frypan and stir to blend with the rice and heat through before serving.

Best Ever Beef Stew:

Ingredients: Serves:4:

500g cheap old beef (chuck, blade, venison's also good or even that UFO hanging around in the bottom of the freezer (Unidentified Frozen Object)) cut into bite-sized pieces

1 teaspoon oil (any apart from olive oil)

1 good sized onion chopped fairly roughly

2 carrots chopped into normal carrot sized chunks

2 potatoes chopped into about 2" dice

1 teaspoon minced garlic

1 teaspoon Worcestershire sauce

1 glass red wine

1 teaspoon beef stock powder (optional)

1 fresh thyme sprig (or 1 teaspoon dried thyme)

2 bay leaves

salt and pepper, to taste - water (to cover)

Directions:

Preparation:15min › Cook:4hours › Ready in:4hours15min

 

1] Get a frying pan good and hot and brown meat well in the oil, do it in batches if necessary to avoid stewing the meat. At this point my casserole dish is also on the heat.

 

2] When meat has a good colour, transfer to dish and pour red wine into de-glaze frying pan. Stand back, eyebrows are good. Throw the rest of the ingredients into dish and give a good stir around. Season well, plenty of pepper and salt give it depth now, you can't add it later and get the same effect. Use cracked pepper or freshly ground. (Ready ground pepper is the devil's dust and should not be used.)

 

3] Pour red wine in from frying pan making sure you get all the yummy bits stuck to the bottom. Add Stewart Island rainwater to cover veggies and meat, about 1/2 cm above is good. Stick in coal-range/slow cooker and forget about it.

 

4] At about half hour before the end of cooking (2-12 hours depending how hungry you are/how many drinks you have had/how long you have toiled at work) let stew bubble without a lid to reduce the sauce, it should have a nice gravy consistency like you'd get from an instant packet gravy.

 

5] If this is taking too long and you're hungry, add said instant packet gravy to get immediate thickening. The meat should be melt in the mouth tender and washing up minimum (eat directly out of dish to create even less dishes). Enjoy!

Barbecue sauce chicken pizza:

Ingredients:

2 tablespoons barbecue sauce
8 inch pizza base
¼ cup tinned diced tomatoes with chilli peppers, well drained
¾ cup precooked chicken
¼ cup mixed-colour capsicums
¼ cup sliced mushrooms
2 tablespoons sliced spring onions
½ teaspoon coriander
¼ cup grated smoked mozzarella

Bacon and egg pie:

Ingredients:

4 sheets filo pastry
4 rashers rindless bacon, chopped
2/3 cup full cream milk
3 eggs
3/4 cup grated tasty cheese
1 roma tomato, thinly sliced
rocket leaves, to serve

Beef Mince and egg pie

Method:

Smear the barbecue sauce evenly over the pizza crust.

Add the remaining ingredients in order listed.

Bake in a 200°C oven for 8 to 10 minutes.

Serve with a simple tossed salad of mixed greens, sliced onions, and cherry tomatoes.

  1. Preheat oven to moderate, 180°C. Lightly grease a 20cm round quiche dish. Place on an oven tray.

  2. Layer filo sheets together. Spray each with oil. Fold in half and ease into dish, covering the base and sides.

  3. Cook bacon in a medium, non-stick frying pan on high for 4-5 minutes, until browned and crisp. Drain on paper towel.

  4. In a jug, whisk together milk and eggs. Add bacon and cheese. Season to taste. Pour into filo case and top with tomato slices.

  5. Bake for 40-45 minutes, until set. Serve with rocket leaves.
